LUT eats organic confectionery

Sodexo, which provides the Lappeenranta University of Technology with restaurant services, has started using only organic flour in its baking.

At the university's main restaurant, Sodexo has a bakery of its own where it makes lunch sandwiches, bread rolls, buns and other confectionery. In addition to using organic flour in baking, its porridges are also prepared from organic flakes, and organic tea and juice are available in the take-away section.

Sodexo is participating in the university's Steps to Organic programme, which aims to help professional kitchens increase the use of organic products as part of operations conformant to sustainable development. The programme has six steps that kitchens can take to gradually increase the use of organic products.

Sodexo at the LUT campus joined the programme in the autumn of 2013 and is now on the third organic step. This means that at least four significant organic raw materials are used at the kitchen at least twice a week. The products can include sour milk, rye crisps, bread and confectionery baked on-site as well as cafeteria products.

"The comments we have received have been very positive. People have been very pleased that we support the university's Green Campus values by using organic products," explains Pirjo Kouvo, Restaurant Manager at Sodexo's LUT branch.
